Finca Las Mercedes is an exceptional specialty coffee produced by Fernando and Juan Aguilar in El Salvador. Carefully honey processed, this coffee showcases the farm's commitment to quality while highlighting the natural sweetness and complexity of the coffee. By allowing a portion of the fruit's mucilage to remain on the bean during drying, the honey process develops a cup with a silky body, vibrant fruit character, and balanced sweetness, reflecting both the expertise of its producers and the unique terroir of the farm.

The region

Located in one of El Salvador's renowned coffee-growing regions, Finca Las Mercedes benefits from fertile volcanic soils, high elevations, and a temperate climate that provide ideal conditions for producing exceptional Arabica coffee. The combination of mineral-rich soils, cool mountain temperatures, and carefully managed cultivation encourages slow cherry maturation, allowing the beans to develop greater sweetness, clarity, and complexity. These favourable conditions have helped establish El Salvador as one of Central America's most respected origins for specialty coffee.

History of coffee in EL SALVADOR

Coffee was introduced to El Salvador in the mid-19th century and rapidly became the country's most important agricultural export. By the late 1800s, coffee production had transformed the nation's economy, with many of today's historic farms established during this period. Although the industry has faced challenges over the years, El Salvador has earned international recognition for producing exceptional coffees, particularly varieties such as Bourbon and Pacamara. Today, producers like Fernando and Juan Aguilar continue this tradition, combining generations of experience with modern processing techniques to showcase the remarkable quality of Salvadoran coffee.
